How to cook and enjoy pasta dishes.

What’s the problem with overcooked pasta, you ask? If you’ve ever eaten at a local restaurant in Italy, or any good Italian restaurant anywhere in the world, you’ll understand. For us Italians, pasta is pretty close to a religion. It’s a staple of our diet, like rice for many Asian cultures or potatoes to the Irish. It’s part of our daily meals, family gatherings, and is deeply embedded in our culture. So, we know how it should be enjoyed at its best. 😊

Numero uno: don’t overcook it. Al dente, which means "to the tooth" in Italian, is considered ideal for texture, flavour, and health. Al dente pasta is firm yet tender—not too hard! It provides a slight resistance when bitten, enhancing the overall eating experience. It’s neither hard nor mushy—just right ;) .





 

Another pain point for us: the crime of rinsing the pasta after cooking. Ma basta!

When pasta is cooked, it releases starch into the water, which is essential because it helps the sauce stick to the pasta, creating the dish mamma intended.

Order Truffle Lover Two


TRUFFLE LOVER N2:

EGG TAGLIOLINI AND EGG TAGLIATELLE AL TARTUFO


Serves 4-6 | 20 min

 

Ingredients:

80g Italtouch white truffle butter

15ml Italtouch white truffle oil

500g Italtouch egg tagliatelle or egg tagliolini

90g Italtouch black truffle and mushroom sauce

80g Italtouch truffle carpaccio

1/2 cup reserved pasta cooking water

1 clove garlic

Grated Parmigiano Reggiano and pepper, to taste

 

INSTRUCTIONS:

 

Bring a large pot of salted water to a boil.

In the meantime, melt the white truffle butter over low heat in a sauté pan until lightly golden.

Add the garlic clove to infuse the butter.

Stir in the black truffle and mushroom sauce, cooking for 1 minute.

Cook the pasta according to package instructions until al dente, reserving 1/2 cup of the cooking water.

Add 1-2 tablespoons of the pasta water to the sauce to create a creamier consistency.

Remove the garlic clove.

Drain the pasta and toss it into the sauce, stirring to coat well. Season with grated Parmigiano Reggiano and pepper to taste.

Remove from heat and drizzle with white truffle oil.

Plate the pasta in a nest shape and top each serving with 20g of room-temperature truffle carpaccio as a garnish.
