TruffleTips from Massimo Vidoni, the Truffleman of Dubai
In Italy, truffles aren’t just ingredients — they’re part of the land, the story, the memory. I still remember walking the misty forests with my uncle and his truffle dog in search of that unmistakable aroma. It was never just about food — it was about the moment. Now, in Dubai, my aim is to bring a little of that magic to your kitchen.
Whether you’re making something simple at home or gathering with friends around the table, truffles can transform the ordinary into something memorable — and I’m not talking about anything complicated.
Let’s keep it simple, I’m not a chef but I love to cook, particular with friends. Here’s how to bring truffles into simple dishes.
Truffle oil: a final flourish
Our Italtouch White and Black Truffle Oil is one of the easiest ways to add depth to your cooking. It’s aromatic and delicate — think earthy, rich, and full of character — and it’s perfect for adding right at the end to really bring out that truffle aroma.
Try it with:
- Fried or scrambled eggs
- A simple risotto, just before serving
- Pasta with butter and parmesan — then a drizzle of truffle oil to finish
- On eggs, again — always works
Truffle carpaccio: the visual showpiece
Our Italtouch truffle carpaccio is made with thin slices of real black truffle, preserved in oil and ready to use. It’s the kind of thing you keep in the fridge for that “look what I made” moment.
Try it with:
The heat from your dish releases the truffle’s aroma. It’s simple, elegant, and never overdone. Add to a sauce, or on a Pasta — five or six slices on top of hot spaghetti or tagliatelle is all you need. Add to toasted bread or bruschetta with creamy cheese
Truffle sauce: your best-kept secret
This one’s for the nights you want full flavour without much fuss. Our range of Italtouch truffle sauces are rich, savoury, and versatile. You can add them straight into your pan or spread them like pâté.
Use them for:
- A quick truffle pasta — add a spoon of sauce and a splash of cream
- Spread on warm bread with a drizzle of olive oil
- Add depth to chicken, steak, or roast veg
Truffles at home — it doesn’t have to be complicated
Cooking with truffles isn’t reserved for restaurants or special occasions. I cook with them at home all the time — even on a weekday morning with my daughter. A few slices on eggs, or a dash of oil on toast, and suddenly you’re not rushing through breakfast — you’re enjoying it.
Right now, summer truffles are in season. They have a milder flavour than winter truffles, but they’re still beautifully earthy and delicious. Because they’re more plentiful and easier to find, they’re also more affordable — making it even easier to enjoy truffles at home, without saving them for a special event.
Truffles don’t have to be fussy. A few simple ingredients, a drizzle of truffle oil, or some freshly shaved truffle can turn the everyday into something memorable.
What’s your go-to truffle dish?
Tag me on Instagram @italtouchdubai and show me how you use truffles at home. Whether it’s a pasta, risotto, or something completely unexpected, I love seeing how people bring their own flair to these ingredients.
And remember — don’t wait for a reason. You don’t need guests to open the good oil.
